The added value of this products is the fact that it is pre-sliced! Which results in an enormous gain of time for the (industrial) sandwich maker (as it is also a fully baked product) and the chance of injuries diminishes considerably.
The name "Focaccia" is derived from the Latin word "Focus" and means "hearth". Focaccia originates in the environs of Genoa (northern Italy) and was baked in the fireplace on white-hot charcoal. The favourite recipes of the time centered traditionally, around olives, olive oil and the white wine of the region. The local wine, especially, gave an added dimension of flavour to the bread.
Probably the most popular Italian bread. Born in Genua with Roman roots. Every region in Italy has his own version and filling and it seems that in Napoli it was the start of the well known “pizza”. A whole focaccia from the bakery weighs several kilos and is sold by weight, cut in manageable pieces.
Although this is a fully baked product it is recommended to serve it tepid or hot.
A variety of ingredients can be used for the filling, of course Italian or Mediterranean ones such as: mortadella, pancetta, olives, sun-dried tomatoes, capers, red onion, oregano, basil, rosemary, mozzarella, gorgonzola, pecorino, tuna chunks, prawns, etc.
